ACTUALLY, IN PART OF OUR BIG PROJECT NEXT YEAR, ONE OF THE BIG THINGS WE'RE DOING IS LOOKING AT THE WAY THE FOOD SERVICE PROGRAM OPERATES BECAUSE IT REALLY IS YOU CAN'T HAVE TWO DIFFERENT PEOPLE WORKING IN TWO DIFFERENT PURPOSES AT THE SAME TIME IN THE SAME KITCHEN.

IT'S NOT LAID OUT FOR THAT. YOU'RE COMPETING FOR FLOOR SPACE, YOU'RE COMPETING FOR COUNTER SPACE, YOU'RE COMPETING FOR THE EQUIPMENT.

WE'RE IN THE PROCESS OF REEVALUATING HOW DO WE SHIFT THE WORK IN THE FOOD SERVICE DEPARTMENT TO BE ABLE TO TAKE ADVANTAGE OF THE EQUIPMENT AND CHANGE OUR PRACTICES TO BE MORE EFFICIENT WITH THE SPACE.

BECAUSE THE OTHER THING THAT'S A BIG ISSUE TOO IS THE STORAGE.

THE STORAGE IS ALL PACKED FULL OF COMMODITIES, AND BULK ITEMS, AND A TREMENDOUS AMOUNT OF INVENTORY THAT'S TAKEN UP A LOT OF THE SPACE THAT MAKES IT HARD TO OPERATE IN THE CHILL-BOXES AND THE DRY STORAGE, AND WE HAVE TO THINK ABOUT HOW DO WE GO TO MORE OF ADJUST IN TIME SPARE DOWN OUR INVENTORY TO BE ABLE TO WORK MORE EFFICIENTLY IN THE SPACE WE HAVE.

WE'RE GOING TO SPEND THE YEAR BASICALLY TALKING TO FOOD SERVICE STAFF, AND TALKING TO SOME CONSULTANTS, AND REVAMPING THAT PROGRAM SO WE CAN RELAUNCH SCRATCH COOKING THE YEAR AFTER IN A MORE EFFICIENT MANNER.
